Date and Nut Bites

These yummy bites are another food I talk about often. They are easy to make in under 10 minutes with no baking, and they are full of nutrients, healthy carbs and protein.

Ingredients:

8 pitted dates 1/2 cup raisins 1 cup raw almonds dash of vanilla 1 tsp maple syrup (optional) 1/2 cup lightly chopped, shredded coconut (sweetened or unsweetened) in a small bowl

Place the dates and raisins in a small pot of water and bring it to a boil. Take it off the heat and let it sit for 2 minutes - then drain and let the dates and raisins cool. (The drained water is not needed for this recipe.)

Lightly pulse the almonds in a blender until slightly course. Place the almonds into a small bowl. Lightly pulse the dates and raisins in a blender until gently chopped.

Add chopped dates and raisins to the bowl of almonds. Add vanilla and maple syrup (if using). Mix ingredients with a spoon.

Roll mixture into small balls (just bigger than 1tsp) then roll them into the coconut. Place balls aside to refrigerate for 1/2 hour.
